Slices DEMPSTER’S® Golden Grains Rye, toasted

Medium red bell pepper rings, ½-inch (2.5 cm) thick
4
Eggs
1 cup (250mL)
Spinach or arugula
Pinch each of coarse salt and fresh cracked pepper
Fresh shaved Parmesan cheese

Directions

ARRANGE pepper rings in a single layer in a large non-stick skillet over medium heat. Gently crack an egg into the center of each ring. Cook until set, approximately 3 to 5 minutes, flip over and cook until desired doneness.
TOP each slice of rye toast with greens and eggs.
SPRINKLE with salt, pepper and shaved Parmesan.
TIPS: Just cook the egg until set, the runny yolk provides a “sauce” over the greens and bread to soak up. Hard cooked eggs will seem dry.
