Dempster's® Pita Pockets, halved
2 cups (500mL)
Summer Fresh® Tzatziki, optional
1 lb (500g)
Boneless pork, cut into bite-sized pieces
2/3 cup (75mL)
of your favourite vinaigrette, divided
Zucchini, thickly sliced
Red pepper, cored and cut into 1-inch (2.5 cm) pieces
Red onion, cut into wedges
Small lettuce leaves
¼ cup (50mL)
Crumbled Feta cheese
TOSS pork with 1/4 cup (50 mL) vinaigrette. Marinate while prepping vegetables. Add zuchini, red pepper, and red onion and marinate for 10 minutes or up to one day.
THREAD meat and vegetables onto metal or previously soaked wooden skewers.
GRILL or broil skewers until prok is brown with a hint of pink in the centre, or until internal temperature of pork reaches 160°F (70°C), about 10 minutes.
WARM pitas on grill or in the oven.
STUFF pitas with meat and vegetables and top with lettuce and crumbled feta. Drizzle with remaining vinaigrette or Summer Fresh® Tzatziki.
