Each red and yellow bell peppers, thickly sliced

Portobello mushroom, thickly sliced
1 tbsp (15mL)
Olive oil
Salt and pepper
4 tbsp (75mL)
Hummus

Slices DEMPSTER’S® WholeGrains™ Ancient Grains Bread or BON MATIN® 6 Grain bread

Directions

HEAT sandwich grill to medium.
COMBINE vegetables with olive oil and season with salt and pepper.
PLACE sliced vegetables on grill for 3-5 minutes, or until grill marks are visible and vegetables are fork tender.
SPREAD 1 tbsp (15 mL) hummus on each slice of bread.
ARRANGE sliced vegetables on top of 2 slices of bread.
TOP with remaining 2 slices of bread. Cut on the diagonal and serve immediately.
